Am I the only one who rarely reads the commentary around a recipe that I want?
I usually quickly scroll down to the recipe section and look for the ingredient list and the time it takes to make the recipe! Now sometimes I find the commentary interesting, but sometimes it just feels forced. I mean, how long can someone talk about making cauliflower mash potatoes or whatever.
The story is typically stretched out, drawn out, dragged out, filled with jokes that I do not find funny. I understand though. The blogger needs to get some verbiage in their post. They can’t just post pictures and the recipe, can they? That would defy the “rules” of creating a blog post. I mean, they need to connect with their reader, they need to let them get to know them in an engaging way, while explaining to them how to make…um let’s say, Sweet Potato Hash! Lol!
So, if you have scrolled down to get the recipe, here it is. Here’s the video tutorial, and then the recipe is below that.
- 1 tablespoon extra virgin olive oil, plus extra
- 2 cups sweet potatoes, peeled and diced
- 2 teaspoons sea salt
- 2 teaspoons ground black pepper
- 2 teaspoons paprika
- 2 teaspoons garlic powder
- 1 teaspoon chili powder
- 1/2 small red onion, diced
- 1/4 red bell pepper, diced
- 1/4 green bell pepper, diced
- 1 teaspoon garlic, minced
- 2 teaspoons Lawry's seasoning (optional)
- Fresh cilantro, chopped
- Heat a skillet (preferably cast iron) to high heat and add olive oil
- Place sweet potatoes into skillet and add seasonings and stir (add more olive oil if needed)
- Reduce heat to medium high and allow potatoes to cook for 10 minutes
- Add peppers, onions, and garlic and stir
- Cover and reduce heat to medium, stirring occasionally until potatoes are soft
- Remove from heat, and garnish with fresh cilantro
- Remember you can always add more seasoning if you choose!
