Fabulous Sausage Potato Breakfast Skillet

Ingredients
- 2 tablespoons vegetable oil (more may be needed)
- 5 medium red potatoes, peeled and diced
- 1/4 yellow onion, diced
- 1/2 medium green bell pepper, diced
- 2 teaspoons Lawry's seasoning
- 2 teaspoons smoked paprika
- Salt to taste
- Pepper to taste
- 1/4 cup ground sausage
- 5 eggs
- 1/4 cup cheddar cheese, shredded
Instructions
- Bring a stockpot of water to a high boil and add potatoes.
- Boil for 5 minutes and drain potatoes
- Heat 1 tablespoon oil in a large non-stick skillet over high heat
- Add potatoes, onions, and green peppers
- Season with Lawry's, paprika, salt, and pepper and flip the potatoes to spread the seasoning
- Turn skillet heat to medium and cover. Add more oil if needed.
- Once potatoes are tender, remove from heat.
- In a separate skillet, heat oil to high heat
- Crack eggs into a bowl and whisk well, breaking all the yokes
- Pour eggs into skillet and reduce heat to medium high while scrambling
- Once eggs have reached desired level of doneness, remove from heat and transfer to a plate
- Wash the skillet (or use a different one if you want)
- Cook sausage in the skillet on medium-high heat until it is no longer pink, using a spatula to break up the sausage into a small crumbles
- Turn the heat off and add scrambled eggs back to skillet and stir eggs and sausage together.
- Place the egg and sausage on top of the potatoes
- Add cheese on top. Cover skillet to melt cheese (may need to heat skillet briefly) or if your skillet is oven-friendly, place it under a broiler to melt cheese.
- Top with fresh parsley (optional)
