One of the surprising things I learned when I moved from Arkansas to Maryland, was that fried catfish wasn’t the go-to fish. If fried fish is being served in Maryland, it’s more than likely whiting. In Arkansas, it’s almost always catfish! Needless to say, I grew up eating lots of fried catfish. I grew up eating it with a piece of white bread (often referred to as “lite bread”), along with hot sauce and plain yellow mustard. The combination is crunchy, sour, and spicy and I still eat it this way today (why mess up a good thing?!). French fries and hush puppies are a couple of preferred side dishes we would eat with this.
