Meatless. If you have never gone meatless before, I encourage you to try it. I won’t get into a big discussion about whether or not eating meat is bad, I will say that there are so many great meatless options that you may not miss it as much as you think.
One meatless option I enjoy is cauliflower! I have had the Buffalo Cauliflower Bites (which are a substitution for Buffalo Chicken Nuggets), and they were tasty.
Of course I have had cauliflower as a side dish, like cauliflower mashed potatoes, and roasted cauliflower medley (with broccoli and carrots). But cauliflower as a main dish in a taco??? I couldn’t wait to try it!
The recipe is super fast and fabulous. The fact that there are only a few ingredients and that your use of a sheet pan makes for easy cooking and cleaning. Are you convinced to try these yet? I hope so! Let’s go!
So wash and cut your veggies all up, and put them in a large mixing bowl with a lid. I used 1/4 of each of the whole peppers and onion, and a whole head of a small cauliflower (about 2 cups worth when cut). Then add 2 tablespoons of extra virgin olive oil and a package of taco seasoning.
Ok so put the lid on your bowl and shake it up real good. You just want all the seasoning to get all over the veggies! Now spread them out on a baking sheet, making sure the veggies don’t overlap.
Next you want to roast them at 425 degrees for about 20 minutes. To get a nice char on both sides, flip them over at around 10 minutes into the cooking process. Taco seasoning on roasted cauliflower is the BOMB (if people still say that). I almost ate them all before ever assembling a taco! NOTE: Roasting your cauliflower until it’s nice and crispy is the way to go, even if you have to remove your peppers and onions after 20 minutes, and let your cauliflower roast for another 5 – 10 minutes.
That’s it! They are done. Serve them up on tortillas with your favorite fixings, like salsa, cabbage, lime juice, jalapeno, sour cream (or greek yogurt like I used here), and guacamole.
